Coconut Margaritas
Coconut Margaritas
Ingredients
- 1 cup sweetened shredded coconut
- 1/2 teaspoon salt
- 1/2 cup freshly squeezed lime juice, plus 2 tablespoons for glasses (about 5 limes)
- 3/4 cup Coco Lopez or cream of coconut
- 1/2 cup plus 2 tablespoons tequila
- 1/4 cup Cointreau or other orange liqueur
Directions
- Preheat oven to 350 degrees. On a rimmed baking sheet, toss coconut with the salt. Spread on sheet; toast in oven, stirring frequently, until golden brown, 8 to 10 minutes. Let cool, then crush with your hands until crumbly.
- Pour 2 tablespoons lime juice into a shallow dish. Place coconut mixture in another dish. Dip rims of two cocktail glasses in lime juice, then in coconut mixture, coating well.
- Combine remaining ingredients with 1 cup ice in a blender; puree until smooth. Divide evenly between prepared glasses, and serve immediately.

Blackberry Champagne Margarita
Blackberry Champagne Margarita
Ingredients: (Makes 2 cocktails)
- 1 cup blackberries + more for garnish
- 2 tbsp sugar
** Note: Having made many more margs since this one, I would actually recommend using simple syrup rather than straight sugar — it’ll give you a more concentrated and even sweet flavor. Just bring 1 cup sugar and 1 cup water to a simmer over the stove, until sugar is completely dissolved. Then, measure out the amount of syrup you’d like to use in your beverage. I suggest starting out with 1 oz, and tweaking it from there based on taste.
- 1 tbsp lemon (or lime) juice
- 4 oz champagne (1 oz = 1 shot)
- 2 oz tequila
- 1 cup blackberries + more for garnish
- 2 tbsp sugar

(2) Add tequila, cap the shaker, and shake until mixture is well-combined.
** Don’t be a dummy like me and shake after adding champagne. Champagne is fizzy, and shaking it will just cause you to have a messy, red explosion all over your counters. You could also just combine all the ingredients in a carafe and stir vigorously.
(3) Uncap shaker and pour mixture directly into 2 champagne glasses. Divide champagne between glasses, and stir gently.
** You can strain the liquid out, or leave the fruit chunks. I personally think this drink tastes better with crushed pieces of fruit adding extra flavor.(4) Garnish with more blackberries and some mint.
(5) Enjoy!

1 cup ruby red grapefruit juice
1/2 cup fresh squeezed lime juice (about 4 limes)
1 cup triple sec orange liqueur
3 cups ice
1 cup silver tequila
1 lime cut in wedges
optional Kosher salt

Margarita Shots!

I used kitchen shears to cut out the pulp. Then a spoon finish up. Cut a small circle off the bottom so they'll stand up. Make sure not to cut through the pulp!
Next, salt the rim, just like you would a glass...
Then fill with you favorite Margarita shot, or just tequila. I use Baha Bob's sugar free mix with Patron & Grand Marnier. OR, I skip the mix and just use the lime juice from the limes I cut with a splash of Club Soda. Cheers & Enjoy!
