Birthday Cake Shots

Yield: 1 shot (but you can make up to 6 at a time in a standard martini shaker)

Ingredients
1 ounce cake flavoured vodka (e.g. Pinnacle or Three Olives)
1 teaspoon dry white cake mix
1/2 ounce whipped cream flavoured vodka (e.g. Pinnacle) or chocolate liqueur
1/2 ounce half & half (10.5-18% fat cream)
whipped cream (for topping)
sprinkles (for topping)

Method
Shake all ingredients in a martini shaker with ice and strain into sprinkle-rimmed (optional) shooter or shot glass and top with whipped cream and more sprinkles.

Notes
  • The dry cake mix dissolves right into the drink when you shake it up in the martini shaker, I promise.
  • If you can only find the cake vodka, you can always use more in place of the whipped cream vodka or chocolate liqueur--it's good both ways! Or, so they tell me. *ahem* You actually can't go wrong--you can improvise with any sweet liqueur along with the cake vodka. For some reason it all seems to work. Again, so they tell me.

Ginger Mojito Recipe

Ingredients

  • 10 fresh mint leaves
  • 1/2 lime, cut into 4 wedges
  • 2 tablespoons white sugar, or to taste
  • 1 cup ice cubes
  • 1 1/2 fluid ounces white rum
  • 1/2 cup club soda
Place mint leaves and 1 lime wedge into a sturdy glass
Use a muddler to crush the mint & lime to release the mint oils & lime juice.
Add 2 more lime wedges and the sugar, & muddle again to release the lime juice.
Do not strain the mixture.
Fill the glass almost to the top with ice.
Pour the rum over the ice, then fill the glass with carbonated water.
Stir, taste and add more sugar if desired.
Garnish with remaining lime wedges.
WOW! What a refreshing and easy drink to make. I am not a big drinker (of alcohol) so what we did after the first drink was start playing around with non-alcoholic versions. We made one with just club soda, but didn’t think it had any “kick” to it. I think it would have been good with tonic instead, but we didn’t have any.
The second non-alcoholic mojito we made we used ginger ale. That one was GREAT!
Each time we made one, we just kept adding to the mint and lime that was already in the glass. I realize after a few of these we would have to take out the lime and mint left-overs to make room for the liquid.
My mint has been growing well this year. It is a bit leggy in the spring so as I started to cut it back I would stash some mint leaves in the refrigerator. It was time to make a mojito using my homemade ginger beer. I used the basic ingredients from the above recipe, but I  did not add any sugar since there is already sugar in my ginger beer.

The S'mores Martini

The S'mores Martini

1 oz. chocolate vodka
1 oz. Baily's Irish Cream
1 oz. chocolate liquor
1 oz. Cream de Cacao
1 oz. vanilla vodka
2 oz. heavy cream
Toasted marshmallows, graham crackers (crushed), chocolate syrup, bamboo Martini skewers.

Dip the rim of glasses into the chocolate syrup, then into the crushed crackers. Chill glasses in freezer.
Pour all remaining ingredients, except marshmallows, into a Martini shaker filled with ice, and shake until well blended.  Pour into really nice glasses.  Skewer the toasted marshmallows on the bamboo skewers, place across the rim and serve..for about 2 servings.
